Guacamole

This is a super simple recipe, really. Basically it’s jusy chopping up or smashing up avocado with some tomatoes. BUT i am sharing with you one of my fancy ones today, to impress your family and friends!

INGREDIENTS:

1 large avocado, peeled, seeded and cut into small cubes (about 1/4 inch)
3 large tomatoes (roma tomatoes if you have), finely diced
1/4 cup zucchini, peeled, and finely diced
1/4 cup cucumber, peeled, seeded and finely diced
1/4 cup pineapple, finely diced (this is OPTIONAL but recommended)
1/4 chopped cilantro
1 Tablespoon chopped scallion
1 Tablespoon red onion, minced
1 teaspoon lime juice
pinch of Natural sea salt
blackpepper as needed

DIRECTIONS:
Combine all these ingredients in a large bowl and mix them slowly by hand
Store in an airtight container in the refrigerator for up to 12 hours. Always better eaten fresh.
